May is a wonderful month for celebrating life! Not only are we given the chance to honor our mothers who gave us life, but life itself is returning to gardens and farmers' markets across the country. This month cherries are appearing in all their robust, gorgeous redness. Radishes, fresh spinach, basil and cauliflower are beckoning us to create mouthwatering recipes bursting with freshness. Enjoy these advanced raw food recipes for May and celebrate life!

Deluxe Cherry Pudding Ingredients: 2 cups ripe dark red cherries 1 cup diced melon (any kind you like) 2 cups fresh spinach Meat of one young Thai coconut 2 dried stevia leaves 1 avocado Blend until creamy and smooth in a Vita-Mix or other blender. Pour into a beautiful bowl and garnish with finely chopped pistachios. Eat with a spoon. Serves 1 Mediterranean Basil Topper Ingredients: 1 small and 1 medium zucchini 2 ripe tomatoes, diced 1 yellow or orange bell pepper, seeded and diced 1 ripe mango, any variety, diced 1 avocado, diced 1 cup of fresh basil, chopped 1/2 cup sliced fennel bulb 1 dash of Celtic sea salt (optional) Spiralize the medium zucchini and place in 2 serving bowls. Thoroughly mix the remaining ingredients or pulse in a food processor until still slightly chunky. Pour over the spiralized zucchini in the bowls. Alternatively, you could serve over a bed of mixed greens. Serves 2 Cauliflower Rice Wraps Ingredients: 1/2 a head of fresh cauliflower handful of chopped scallions 1 ripe tomato 1/2 red pepper 1/2 cup fresh parsley, chopped squeeze of lemon juice (approximately 1 Tbs.) dash of Celtic sea salt (optional) 1 avocado, diced 1 cup cucumber, diced 4 sheets of Nori Put all ingredients except the avocado, cucumber and nori in a food processor and pulse until mixture is crumbly and has the appearance of rice. Lay nori sheets on the counter and place about a cup of the mixture onto the end, add avocado and cucumber and roll up burrito style. Place on attractive plates and garnish with sprouts. Serves 2 Eternity Juice Very green, iron rich and hydrating Ingredients 1 bunch of fresh spinach 1 whole lemon, peel removed (vitamin C makes the iron in the spinach easier to absorb) 1 whole cucumber 1 baby bok choy 1 green apple 1/2 small beet root handful of fresh stevia leaves Run all ingredients through your juicer and drink immediately. Adjust to taste with extra stevia if desired. Serves 1
