Having friends over? Serve these date boats. They taste delicious and filling even when made without the cream.
- 10 Medjool dates
- 10 walnut halves, soaked and rehydrated
- ½ cup cashews, soaked for a few hours
- 1/8 cup water
- ½ tsp. vanilla
- 1 tsp. lemon juice
- 1 tsp. honey
- 1/8 tsp. cardamom (optional)
- 2 Tbsp. shredded coconut
Make the cream by blending all the ingredients in a blender until smooth. Place in the refrigerator to cool. Meanwhile, remove the pits from the dates by cutting each date lengthwise on one side. Fill the opening with the cream, and insert a walnut half in each date. Arrange on a plate, and sprinkle with coconut. Makes 10 date boats.
