Kozinaki Fruit and Nut Clusters

A raw twist on this Russian sweet treat for kids and adults.

Ingredients:
  • 2 cups almonds, soaked and re-hydrated
  • 2 cups mixture of your favorite dried fruits (try using apricots, raisins, prunes), soaked for 2-3 hours and drained
  • 1-2 Tbs. raw honey
  • 1/2 cup hulled sesame seeds plus extra to sprinkle on top
Pulse almonds in a food processor until they form medium size crumbs. Add the dried fruit and honey and continue to pulse, eventually adding sesame seeds to the mix. Once you get the spreadable consistency, spread the mixture a bit thicker than for crackers on a couple of Teflon sheets in the dehydrator and score it into cracker size rectangles or squares with the tip of a knife. Sprinkle with sesame seeds on top. Dry at 105 F for about 12 hours, then flip over onto the regular dehydrator sheets and keep drying for another 8-12 hours until the kozinaki reach the desired consistency. Note: Preparation time is 20 minutes plus soaking and drying time.
