This Valentine’s Day, treat yourself and a loved one to these simple raw recipes. You will be delighted at the minimal amount of ingredients and the ease of preparation. Your digestion will thank you, and you will be convinced that food doesn’t have to be complicated to be delicious. 

Coconut Yogurt Special treat for your Valentine Ingredients: Meat from three young Thai coconuts (be sure to save the coconut water for later) juice of half a lemon 1 inch of vanilla bean Blend ingredients until smooth in a Vita-Mix or other blender and pour into two dessert cups. Top lavishly with fresh sliced peaches, mango or berries. Garnish with fresh Stevia leaves. Serves 2 Parsnip Rice A simple accompaniment to any of your favorite entrees. Ingredients: 2 cups parsnips, peeled and cubed ½ cup pine nuts, soaked Pulse in food processor until crumby and rice-like in texture. Serves 2 Fennel Citrus Salad The combination of fennel and grapefruit brings this salad a festive flair. Ingredients: 1 bulb of fennel , sliced thinly and diagonally 1 grapefruit, peeled and sectioned and then sections cut in half 4 cups fresh spinach or mixed greens Arrange ingredients attractively atop the greens on a platter and serve with your favorite raw dressing. Serves 2 Stuffed Cucumbers Make these in advance so you can just grab and go. Ingredients: 2 large cucumbers 2 ripe tomatoes 1 cup fresh, packed basil Slice the cucumber in half crosswise and carefully scoop out the middle with a spoon. Put this into a food processor along with other ingredients. Pulse until chunky. Fill the middle of the cucumbers and you have a portable meal, perfect for a busy day. Serves 2 Avocado Dream Soup You can substitute any kind of juice you like and it always seems to come out good. Ingredients: 2 cups carrot and celery juice 2 avocados juice of one lime Blend ingredients until smooth and pour into two soup bowls. Garnish with an abundance of fresh chopped dill, cilantro or leeks. Serves 2 Halvah Hearts This is definitely a rich, decadent treat that you will want to save for special occasions. Like Valentine’s Day! Ingredients: 1 cup raw tahini 1 cup fresh medjool dates 1 cup soaked sesame seeds, drained Mix the first two ingredients thoroughly in a food processor until smooth. Stir in sesame seeds and spread thinly onto a flat sheet. (Tip: Rolling it out underneath a sheet of wax paper with a rolling pin works terrific) Refrigerate until firm and use a heart-shaped cookie cutter to cut out individual candies. Serves 2 Enjoy!
