Mango Chia Pudding

Chia seeds—yes, you remember the “Chia Pet” commercials, don’t you? Same plant. For a while, there, chia seeds were being touted as a “miracle food.” They’re not—nothing is. But chia seeds do bring some good news. Like Omega-3 fatty acids. And this underappreciated attribute…Chia seeds let you feel full faster, thanks to the amino acid tryptophan, which regulates appetite and improves mood.

Preparation Time: 15 minutes plus time for soaking.

Serves: 3-4


Ingredients:

  • 3 ripe mangoes, peeled, pits removed, and chopped
  • 1 cup fresh orange juice (from 3-4 oranges)
  • 2 Tbsp. chia seeds
  • berries, mint for garnishing.

Directions:

Soak chia seeds in orange juice for a couple of hours or overnight (keep in a cool place in this case). Blend mango in a blender until smooth, and transfer it into a bowl. You can add and mix in soaked chia seeds to the blended mango, or arrange mango and chia in layers in individual serving bowls. Add berries and mint for a splash of color.
