DIRECTIONS

Ingredients for the eggs:

Orange eggs:

  • 1 orange bell pepper, seeds removed, and diced
  • ½ cup macadamia nuts, soaked for a couple of hours and drained
  • ½ cup ground golden flax seeds
  • 2 tsp. fresh lime juice
  • 1/3 tsp. Celtic sea salt

Red eggs:

  • ½ cup pre-soaked sun-dried tomatoes, drained, water reserved
  • 1/3 cup red bell pepper, seeds removed, and diced
  • ½ cup macadamia nuts, soaked for a couple of hours and drained
  • ½ cup ground golden flax seeds
  • 2 Tbs. water from soaked tomatoes
  • 2 tsp. lime juice
  • 1/3 tsp. Celtic sea salt

Yellow eggs:

  • ½ cup pre-soaked macadamia nuts
  • 1 yellow bell pepper, seeds removed, and diced
  • ½ cup ground golden flax seeds
  • 2 tsp. lime juice
  • 1/3 tsp. Celtic sea salt
  • ¾ tsp. ground turmeric

Ingredients for the salad:

  • Frisee, or you can use spinach leaves or Romaine lettuce
  • Alfalfa sprouts
  • Cucumbers
  • Grape tomatoes

Ingredients for citrus salad dressing:

  • juice of 1 grapefruit (about 3/4 cup)
  • 1 clove garlic, peeled and crushed
  • ¼ tsp. Celtic sea salt
  • 4 Tbs. raw almond butter, or ¼ cup olive oil

Eggs:

Prepare orange eggs by placing macadamia nuts in a food processor, and processing them until crushed, then add orange pepper and 2 tsp. lime juice, and continue blending until you get more or less homogenous orange mix. Add salt and ground flax seed, and mix once again. Transfer to a small bowl to thicken for a few minutes while you are preparing the red and yellow colored eggs the same way.

Salad dressing:

Blend all ingredients together in a blender or food processor until well mixed. Transfer to a bowl.

Salad assembly:

Arrange the chosen greens on a big plate, add cut cucumbers and grape tomatoes. Construct a nest out of alfalfa sprouts. Shape a few “eggs” out of the colorful mixes you prepared, and place them in the nest. Serve with the citrus dressing on the side.

Note: Preparation time is 40 minutes, plus soaking time.
