Carrot-Radish Yachts

Visually elegant and appealing, these little veggie boats are super-easy to make and will hit the spot, taste-wise.

  • 1 cup whole lettuce leaves, more as needed
  • 1 carrot, grated
  • 2 tsp. lemon juice
  • 1 tomato, chopped
  • ¼ cup radish, sliced
  • 3 Tbsp. walnuts, chopped
  • ¼ tsp. salt pinch of pepper
  • 1 Tbsp. olive oil

Directions: In a bowl, combine carrot, lemon juice, tomato, radish, olive oil, salt, and pepper. Set aside. Assemble the lettuce boats, trimming edges a little for shape. Top each lettuce leaf with the carrot salad. Sprinkle with walnuts. Serve right away.
