- 2 bananas, chopped
- ¼ cup fresh grated coconut
- 4 tsp raw honey
- ¾ cup walnuts
- ¼ vanilla bean (optional)
Directions: Soak walnuts in water overnight. Drain and place them in a blender or food processor.
Cut the vanilla bean in the middle. Using a spoon, collect the small seeds inside. Add the vanilla seeds, banana, coconut, and raw honey to the blender with the walnuts. Combine the ingredients, but do not over-blend—small pieces should remain. Pour the mixture into an ice mold. Freeze until solid. Remove from mold and decorate with coconut.
