Valentine’s Day Raw Cheesecake Slices

Love me tender, love me sweet…with these scrumptious slices of cheesecake. This creamy raw cashew-based cheesecake topped with strawberry puree is a perfect dessert to treat your valentine.

Serves: 6 pieces



  • ½ cup sunflower seeds
  • ¼ cup oats
  • 5 fresh dates, pitted
  • 2 Tbsp coconut oil
  • 1/8 Tbsp sea salt

Cheesecake layer:

  • 1 cup soaked cashews
  • ½ cup shredded coconut
  • 3 Tbsp coconut meat
  • 3 Tbsp coconut oil

For decoration:

  • ¼ cup strawberry puree
  • karkade or rose petals
  • cranberry


Process the sunflower seeds in a food processor. Add the chopped dates and oats, and process again until evenly mixed. Add the coconut oil and sea salt. Cover an 8-inch springform cake pan with parchment paper. Press the mixture into the bottom and boards of the pan and place in the freezer. 

To make a filling, strain the cashews. Mix coconut meat, shredded coconut, and coconut oil and add to the cashews.  Take the crust from the freezer and pour the filling on top. Place back in the freezer for 30 min. Take the form from the freezer and pour strawberry puree on top. Cut into 6 slices. Decorate with cranberries and karkade or rose petals. Serve with love.
