Apple and Cashew Cream Pie

  • 1 cup of dates
  • 1/2 cup of shredded coconut
  • 1 cup of walnuts
  • 1 Tbsp of coconut oil    
  • 1 Tbsp of cinnamon 


  • 1-1/2 cup of soaked cashews
  • 1/4 cup of water
  • 2 Tbsp of coconut oil 
  • 1 Tbsp of honey 
  • 1 Tbsp of allspice

Top layer: 

  • 3 Granny Smith apples 
  • 3 medjool dates soaked in warm water 
  • 1 Tbsp of lemon
  • 1/4 cup of lemon juice
  • 1 tsp of cinnamon   


Blend all ingredients for crust in food processor. Press the mix evenly onto a round 9-inch pan. Then blend the ingredients for filling until super smooth and pour into the tray with crust. Put it in the refrigerator to set and cool for about 10 minutes. Meanwhile, peel and slice the apples. Then mix all ingredients for the glaze in a food processor until smooth.  Take the crust with filling out of the fridge and arrange apples on top of it any way you desire. Then brush apples with the glaze. Put it back in the refrigerator to chill before serving.
