- 3 medium beet roots, peeled and finely shredded
- 3 Tbsps lemon juice
- 1/2 cup sunflower seed cheese
- 1 avocado
- 3 medjool dates, pits removed
- 1/2 cup walnuts, crushed
- 2 cloves of garlic, minced
Combine shredded beet roots and lemon juice in a bowl and set aside. Place the sunflower-seed cheese, avocado, and dates into a food processor and puree until creamy. Transfer the mixture to a bowl. Add the remaining ingredients and mix well with a spoon until the mixture is of uniform consistency. Serve on crackers or on a bed or romaine lettuce.
