• 1 cucumber, sliced 
• 1 green bell pepper, sliced 
• 1 small red onion, sliced 
• 2 ripe tomatoes, sliced 
• ½ cup black olives 
• ½ cup cashew cheese 
• 2 tablespoons lemon juice 
• 4 tablespoons extra virgin olive oil
• ½ cup of soaked almond, chopped  
• 1 tsp of oregano
• Salt and black pepper to taste

To create the cashew cheese, begin by soaking 1 cup of raw cashews in water for a minimum of 4 hours. Once soaked, drain the cashews and blend them in a food processor together with 2 tablespoons of lemon juice, 1 tablespoon of nutritional yeast, 1 clove of garlic, and a pinch of salt according to your taste. Then follow the directions in this recipe.

Start by arranging the sliced cucumber, green bell pepper, red onion, and tomatoes on a plate. Sprinkle the black olives over the top, evenly distributing them across the salad.

In a small bowl, whisk together the red wine vinegar, olive oil, salt, oregano, and black pepper to create the dressing. Drizzle the dressing over the salad, ensuring that all the vegetables are coated.

Finally, sprinkle the crumbled cashew cheese and chopped almonds over the top for an added layer of flavor and texture.
