Raspberry Coconut Whip

Raspberries are a perfect Valentine’s Day treat. The whip makes a tasty holiday alternative (or addition) to your daily smoothie. Add more coconut “meat” if you want the whip to be even thicker.

Ingredients:

  • 2 cups fresh raspberries (you can substitute with frozen ones)
  • 1 cup coconut water from a young Thai coconut
  • 4 Medjool dates, soaked for 20 min. and pits removed
  • ½ cup coconut “meat”
  • seeds of 1 vanilla bean, or ½ tsp of vanilla extract
  • 1 tsp. fresh lemon juice
  • pinch sea salt

Directions:

Drain water from the dates, and chop them. Place all ingredients into a high-powered blender and whip on high until well blended. Garnish with fresh raspberries and/or fresh or dry coconut.
