Eating a high raw food diet can be easier with visually appealing meals, and this Layered Green Smoothie is a great example. With its different fruits and veggies, it offers layers of delicious flavor and plenty of nutrients.

While beetroot is packed with nutrients, it can taste earthy, so adding citrus, a bit of agave syrup, or raw honey can help balance the flavor. Spinach, on the other hand, can be mixed with mint or vanilla for a tastier result.

No-Meat Meatballs (Brought to You by Quinoa)

Quinoa, a member of the amaranth family, is an annual crop cultivated mainly for its highly nutritious seeds, rich in protein, fiber, B vitamins, and minerals—more than you’ll find in most grains.

These raw quinoa “meatballs” are delicious, whatever your food preferences may be. They offer a smooth consistency, with an intense flavor given by the onion, garlic, coriander, and your chosen seasonings. We use turmeric, which, along with the carrot, provides a lovely color.

Heartfelt Beetroot Gazpacho

Gazpacho is a traditional cold soup of Spanish cuisine, typically made with ingredients such as cucumbers, tomatoes, peppers, and onions. Recently, a variation of the recipe has gained popularity, in which some of the tomatoes are replaced with beets, resulting in a vibrant purple dish that is perfect for special occasions like Valentine's Day.

Vegan Pad Thai for Two

You’ll find no more universal dish in Thailand’s cuisine than Pad Thai. Though generally made with rice paste, vegetables, and shrimp, it comes in as many variations as there are Thai households. Here’s a raw vegan version that’s finger-licking good. The dish artfully blends Asian flavors with vegetables.

This recipe is ideal for a romantic dinner, where you’d want to share delicious dishes while eating healthy. We substitute coconut for soy, and noodles made from zucchini, carrots, and sprouts for the usual rice noodles. Try this one on Valentine’s Day!

Spirulina, many researchers say, is one of the most complete foods we know: high-quality vegetable proteins, and highly assimilable iron—as much as 28.5 milligrams per 100 grams. Some sources say that’s 58 times more than spinach, 18 times higher than you’ll find in meat. Ideal for vegans. Spirulina contains a blend of amino acids with sulfur, nitrogen, and cyanocobalamin (vitamin B12).
